White Bean and Pesto Bake

Ingredients
  

2 cans (15 oz each) white beans (cannellini or Great Northern), drained and rinsed

1 cup prepared basil pesto (store-bought or homemade)

1/2 cup sun-dried tomatoes, chopped

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese (or a dairy-free alternative)

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

2 tablespoons olive oil

Fresh basil leaves for garnish

Salt and pepper to taste

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the drained white beans, chopped sun-dried tomatoes, halved cherry tomatoes, minced garlic, oregano, and red pepper flakes. Season with salt and pepper to taste.

      Add the prepared basil pesto to the mixture and stir until all ingredients are well-coated and evenly mixed.

        Drizzle olive oil into a 9x13 inch (or similarly sized) baking dish, then pour the bean mixture into the dish, spreading it out evenly.

          Sprinkle the grated Parmesan cheese over the top of the bean mixture evenly.

            Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.

              Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
