1 cup all-purpose flour

2 tablespoons sugar (or maple syrup)

2 tablespoons baking powder

1/8 teaspoon salt

1 cup non-dairy milk (almond, oat, or soy)

2 tablespoons vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

Optional: 1/2 teaspoon cinnamon

Optional toppings: fresh fruits, maple syrup, nut butter, or vegan chocolate chips

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon (if using) until well combined.

    In a separate bowl, mix the non-dairy milk, vegetable oil, and vanilla extract until fully blended.

      Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid overmixing; a few lumps are okay.

        Heat a non-stick skillet or griddle over medium heat. Lightly oil the surface if needed.

          Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look slightly set, about 2-3 minutes.

            Flip the pancakes and cook for another 2-3 minutes until golden brown.

              Transfer cooked pancakes to a plate and cover with a clean towel to keep warm while you repeat with the remaining batter.

                Serve warm with your choice of toppings such as fresh fruits, maple syrup, or nut butter.
