Ingredients

1 cup all-purpose flour

2 large eggs

1 1/4 cups milk

2 tablespoons sugar

1 teaspoon vanilla extract

2 tablespoons melted butter (plus more for cooking)

Pinch of salt

Powdered sugar (for dusting)

Fresh fruits (strawberries, blueberries, bananas) for filling

Whipped cream (optional)

Instructions

In a mixing bowl, whisk together the flour, sugar, and salt until combined.

In another bowl, beat the eggs and then add the milk and vanilla extract. Mix well.

Gradually pour the wet mixture into the dry ingredients, whisking until smooth and free of lumps.

Stir in the melted butter until fully incorporated. Let the batter rest for about 30 minutes at room temperature for better texture.

Heat a non-stick skillet or crepe pan over medium heat and lightly grease it with additional melted butter.

Pour about 1/4 cup of batter into the pan, quickly swirling it around to spread the batter evenly across the surface.

Cook for about 1-2 minutes until the edges begin to lift and the bottom is lightly golden. Flip the crepe using a spatula and cook for another 1 minute.

Transfer the crepe to a plate and repeat with the remaining batter, greasing the pan as needed. Keep the crepes warm.

Serve the crepes with your choice of fresh fruits and a dollop of whipped cream, then dust with powdered sugar before folding them and serving.
