Ingredients

1 lb ground beef

1 lb ground pork

2 large russet potatoes, peeled and grated

1 cup shredded cheddar cheese

1/2 cup sour cream

1/2 cup milk

1 cup breadcrumbs

1/2 cup finely chopped green onions

2 cloves garlic, minced

2 large eggs, beaten

1 tablespoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1 tablespoon ketchup (for glaze)

Optional: additional cheese for topping

Instructions

Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.

In a large mixing bowl, combine the grated potatoes, ground beef, and ground pork.

Add the shredded cheddar cheese, sour cream, and milk to the meat mixture, and stir well to incorporate.

Sprinkle in the breadcrumbs, chopped green onions, minced garlic, beaten eggs, Worcestershire sauce, salt, black pepper, and smoked paprika. Mix until everything is evenly combined.

Transfer the meat mixture into the prepared loaf pan, shaping it into a loaf shape.

Brush the top of the meatloaf with ketchup for a delicious glaze. If desired, sprinkle additional cheese over the top.

Place the meatloaf in the oven and bake for 1 hour, or until the internal temperature reaches 160°F (70°C).

Once done, allow the meatloaf to rest for about 10 minutes before slicing. This helps retain its juices.

Serve warm, garnished with extra green onions if desired, and enjoy your ultimate loaded potato meatloaf!
