Tuscan Chicken Pasta Recipe

Ingredients
  

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

12 oz penne pasta

Fresh basil, for garnish

Instructions
 

Cook the pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the chicken: Season the chicken breasts with salt and pepper on both sides. In a large skillet, heat olive oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side or until fully cooked. Remove the chicken from the skillet and let it rest before slicing it into strips.

      Make the sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add the cherry tomatoes and cook for another 3-4 minutes, until they begin to soften.

        Combine spinach and cream: Add the fresh spinach and stir until it wilts. Pour in the heavy cream and allow it to simmer for about 2-3 minutes. Stir in the grated Parmesan cheese and Italian seasoning, mixing until the sauce is smooth and creamy.

          Mix everything together: Add the cooked penne pasta and sliced chicken into the skillet. Toss everything together until well combined and heated through. Adjust seasoning with salt and pepper to taste.

            Serve: Divide the pasta among plates or bowls. Garnish with fresh basil leaves and additional Parmesan cheese, if desired.
