Turkey Breakfast Patties with Avocado and Egg

This easy recipe combines flavorful ground turkey with Parmesan and spices to create satisfying patties. 1 pound ground turkey

1/4 cup breadcrumbs (or almond flour for a low-carb option)

1/4 cup grated parmesan cheese

1 clove garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for some heat)

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)

1 tablespoon olive oil (for cooking)

2 large eggs

1 ripe avocado, sliced

Fresh lime juice (to drizzle on avocado)

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the ground turkey, breadcrumbs (or almond flour), parmesan cheese, minced garlic, onion powder, smoked paprika, salt, pepper, cayenne pepper (if using), and parsley. Mix until well combined.

    Form the mixture into small patties, about 2-3 inches in diameter. You should get about 8-10 patties, depending on size.

      Heat the olive oil in a large skillet over medium heat. Once hot, add the turkey patties in batches, making sure not to overcrowd the pan. Cook for about 5-7 minutes on one side until golden brown, then flip and cook for another 5-7 minutes until fully cooked through (internal temperature should reach 165°F or 74°C). Remove from skillet and keep warm.

        In the same skillet, crack the eggs and cook to your desired doneness (sunny-side up, over easy, or scrambled).

          While the eggs are cooking, slice the avocado and drizzle with fresh lime juice and a pinch of salt and pepper.

            To serve, place a turkey patty on a plate, top with a cooked egg, and arrange avocado slices on the side. Drizzle with extra lime juice if desired.
