Traditional Egyptian Koshari

Ingredients
  

1 cup lentils (green or brown)

1 cup rice (long-grain)

1 cup elbow macaroni

1 can (15 oz) chickpeas, drained and rinsed

1 large onion, thinly sliced

4 cloves garlic, minced

2 large tomatoes, diced

2 tablespoons tomato paste

1 teaspoon cumin

1 teaspoon coriander

1 teaspoon paprika

1/2 teaspoon turmeric

1/4 teaspoon cayenne pepper (optional)

Salt and pepper, to taste

4 tablespoons vegetable oil

1 tablespoon vinegar (white or apple cider)

1/2 cup crispy fried onions (store-bought or homemade)

Instructions
 

Prepare the Lentils: Rinse the lentils under cold water. In a pot, add the lentils and cover with water (approximately 3 cups). Bring to a boil, then reduce to a simmer and cook for about 20-25 minutes until tender but not mushy. Drain and set aside.

    Cook the Rice: In a separate pot, wash the rice until the water runs clear. Add 2 cups of water, along with a pinch of salt. Bring to a boil, then simmer on low heat for about 18-20 minutes or until the water is absorbed and the rice is fluffy. Remove from heat and let it sit covered for 5 minutes.

      Prepare the Pasta: Cook the elbow macaroni in salted boiling water according to package instructions, usually about 7-9 minutes. Drain and set aside.

        Make the Sauce: In a pan, heat 2 tablespoons of vegetable oil over medium heat. Add the sliced onions and fry until golden brown. Stir in minced garlic and sauté for another 30 seconds.

          Add Tomatoes & Spices: Add the diced tomatoes to the onion mixture along with the tomato paste, cumin, coriander, paprika, turmeric, cayenne pepper (if using), and salt and pepper. Cook for about 5-7 minutes until the tomatoes break down and the sauce thickens. Stir in the vinegar and cook for another 2 minutes. Set aside.

            Assemble the Koshari: In a large serving dish, layer the rice, followed by the lentils, then the macaroni. Pour the tomato sauce evenly over the top and gently mix together ensuring that all components are incorporated.

              Serve: Top with chickpeas and sprinkle crispy fried onions over the top for crunch. Serve warm with extra chili sauce or vinegar on the side if desired.
