12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup black olives, sliced

1/4 cup fresh basil, chopped

1/2 cup feta cheese, crumbled

1/4 cup olive oil

2 tbsp balsamic vinegar

1 tsp garlic powder

Salt and pepper to taste

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.

    Prepare the Veggies: While the tortellini is cooking, chop the cherry tomatoes, cucumber, red bell pepper, red onion, and black olives. Add them to a large mixing bowl.

      Mix the Dressing: In a separate small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and pepper until well combined.
