Tomato Jam Bruschetta

4 cups ripe tomatoes, diced

1 cup onions, finely chopped

4 cloves garlic, minced

1 cup brown sugar

1/4 cup balsamic vinegar

1 tablespoon fresh thyme leaves

1 tablespoon olive oil

Salt and pepper to taste

1 baguette, sliced

Fresh basil leaves, for garnish

Instructions
 

Prepare the Tomato Jam: In a saucepan, combine the diced tomatoes, chopped onions, minced garlic, brown sugar, balsamic vinegar, thyme, and a pinch of salt and pepper.

    Cook Down: Bring the mixture to a simmer over medium heat. Cook for about 45 minutes to an hour, stirring occasionally, until the tomatoes are broken down and the mixture thickens to a jam-like consistency.

      Preheat the Oven: While the jam is cooking, preheat your oven to 400°F (200°C).

        Toast the Baguette Slices: Place the baguette slices on a baking sheet. Brush both sides with olive oil and season with a pinch of salt. Bake for 8-10 minutes, or until they are golden and crisp.

          Assemble the Bruschetta: Once the tomato jam is ready, spread a generous spoonful over each toasted baguette slice.

            Garnish and Serve: Finely chop some fresh basil leaves and sprinkle them over the top for added flavor and garnish. Serve immediately while the bruschetta is warm.
