Ingredients

1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/4 cup granulated sugar

2 tablespoons brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup milk (or non-dairy milk)

1/4 cup vegetable oil

1 large egg

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (optional for extra chocolatey goodness)

Optional toppings: whipped cream, fresh berries, maple syrup, or chocolate sauce

Instructions

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.

Mix Wet Ingredients: In a separate bowl, combine the milk, vegetable oil, egg, and vanilla extract. Whisk until smooth.

Combine: Pour the wet ingredients into the dry ingredients. Gently mix until just combined. The batter will be thick, and it's okay if there are a few lumps. If using dark chocolate chips, fold them in at this stage.

Prepare the Pan: Preheat a non-stick skillet or griddle over medium heat and lightly grease it with non-stick spray or a small amount of butter.

Cook Pancakes: Pour 1/4 cup of batter onto the skillet for each pancake. Cook until the edges look set and bubbles form on top, about 2-3 minutes. Flip and cook for another 1-2 minutes until the other side is cooked through and lightly browned.

Serve: Transfer the pancakes to a warm plate. Stack them high and top with your choice of whipped cream, fresh berries, maple syrup, or drizzled chocolate sauce.

Enjoy: Dive into the most amazing chocolate pancakes while they’re warm and enjoy a delightful chocolatey breakfast treat!
