1 lb ground beef or Italian sausage

1 medium onion, diced

3 cloves garlic, minced

1 (28 oz) can crushed tomatoes

1 (15 oz) can tomato sauce

4 cups beef or vegetable broth

2 cups uncooked small pasta (such as orecchiette or ditalini)

2 teaspoons dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil or parsley for garnish

Instructions
 

In a large pot over medium heat, cook the ground beef or sausage until browned, breaking it apart with a wooden spoon. Drain excess fat if necessary.

    Add the diced onion and minced garlic to the pot, and sauté until the onion is translucent, about 5 minutes.

      Pour in the crushed tomatoes, tomato sauce, and broth. Stir to combine, then bring the mixture to a simmer.

        Add the dried basil, oregano, salt, and pepper. Let the soup simmer for about 15 minutes to allow the flavors to meld.

          Stir in the uncooked pasta and cook according to the package instructions until al dente, usually about 8-10 minutes.
