1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

1/2 cup chocolate chips (optional)

For the Cookie Layer:

1/2 cup (1 stick) unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup chocolate chips

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch baking dish with parchment paper, leaving an overhang on the edges for easy removal.

    Prepare the Brownie Layer:

      a. In a medium saucepan, melt the butter over low heat.

        b. Remove from heat and stir in the granulated sugar, eggs, and vanilla until well combined.

          c. Mix in the cocoa powder, flour, salt, and baking powder until smooth.

            d. Fold in chocolate chips if using. Set aside.

              Prepare the Cookie Layer:

                a. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

                  b. Add the egg and vanilla extract, mixing until well incorporated.

                    c. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, stirring until combined.

                      d. Fold in the chocolate chips.

                        Assemble the Browkies:

                          a. Pour the brownie batter into the prepared baking dish and spread it evenly.

                            b. Dollop spoonfuls of the cookie dough on top of the brownie layer, spreading it gently with a spatula to cover as much of the brownie layer as possible.

Bake: Place the assembled browkies in the preheated oven and bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

Cool and Slice: Allow the browkies to cool completely in the pan on a wire rack. Use the overhanging parchment paper to lift them out of the pan. Cut into squares and serve.
