2 cups cooked chicken, chopped (preferably grilled or rotisserie)

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 avocado, diced

1 small red onion, finely chopped

1 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Instructions
 

Prepare the Chicken: If not using pre-cooked chicken, grill chicken breasts until cooked through, about 6-7 minutes per side. Once cooled, chop into bite-sized pieces.

    Combine Vegetables: In a large mixing bowl, add the chopped chicken, black beans, corn, red bell pepper, cherry tomatoes, avocado, red onion, and cilantro.

      Make the Dressing: In a separate small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper until well combined.

        Toss the Salad: Drizzle the dressing over the salad mixture and toss gently until everything is well coated.
