Ingredients
  

1 lb boneless chicken thighs, cut into bite-sized pieces

1 tablespoon vegetable oil

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 red bell pepper, sliced

1 cup pineapple chunks (fresh or canned)

1/4 cup soy sauce

1/4 cup honey

2 tablespoons sriracha (adjust for spice preference)

1 tablespoon rice vinegar

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

Fresh cilantro, chopped (for garnish)

Cooked jasmine rice (for serving)

Instructions
 

Prepare the Sauce: In a medium bowl, whisk together the soy sauce, honey, sriracha, and rice vinegar. Set aside.

    Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the garlic and ginger and sauté for about 30 seconds until fragrant. Add the chicken pieces to the pan and cook for about 5-7 minutes or until they start to brown and are cooked through.

      Add Vegetables: Toss in the sliced red bell pepper and pineapple chunks, stirring everything together for another 3-4 minutes until vegetables are tender but still crisp.

        Combine Sauce and Thicken: Pour the prepared sauce over the chicken and vegetables. Stir to coat all ingredients evenly. Bring the mixture to a low simmer, then add the cornstarch slurry. Cook for an additional 2-3 minutes, stirring, until the sauce thickens.

          Serve: Remove from heat and garnish with fresh cilantro. Serve the Sweet and Spicy Thai Chicken over a bed of jasmine rice.
