Sweet and Savory Pineapple Chicken and Rice Recipe

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup pineapple chunks (fresh or canned)

1 cup jasmine rice

1 medium red bell pepper, diced

1 medium onion, diced

2 cloves garlic, minced

1/4 cup soy sauce

1/4 cup brown sugar

1 tablespoon rice vinegar

1 teaspoon grated fresh ginger

1 teaspoon cornstarch mixed with 2 tablespoons water

2 tablespoons vegetable oil

Salt and pepper to taste

Fresh cilantro for garnish

Sliced green onions for garnish

Lime wedges for serving

Instructions
 

Prepare the Rice: Cook the jasmine rice according to package instructions. Once cooked, set aside and keep warm.

    Marinate the Chicken: In a bowl, combine soy sauce, brown sugar, rice vinegar, grated ginger, and a pinch of salt and pepper. Add the chicken pieces and let them marinate for at least 15 minutes.

      Sauté Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated chicken (reserve the marinade) and cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the diced onion, red bell pepper, and minced garlic. Stir-fry for about 3-4 minutes, or until the vegetables are tender and aromatic.

          Combine Ingredients: Return the cooked chicken to the skillet along with the pineapple chunks. Pour in the reserved marinade and bring to a gentle simmer.

            Thicken the Sauce: Stir in the cornstarch mixture and cook for an additional 1-2 minutes, or until the sauce thickens and coats the chicken and vegetables nicely.

              Serve: Fluff the cooked rice and divide it among serving plates. Spoon the sweet and savory pineapple chicken mixture over the rice. Garnish with fresh cilantro, sliced green onions, and serve with lime wedges on the side.
