Summer Corn Salad

Ingredients
  

4 ears of fresh corn, husked

1 cup cherry tomatoes, halved

1 cup diced cucumber

1/2 cup red onion, finely chopped

1/4 cup fresh basil, chopped

1/4 cup feta cheese, crumbled

3 tablespoons olive oil

2 tablespoons apple cider vinegar

Salt and pepper to taste

1 teaspoon honey (optional)

Instructions
 

Bring a large pot of water to a boil. Add the husked corn and cook for 3-5 minutes until tender. Remove from water and allow to cool.

    Once cool, carefully slice the kernels off the cob into a large mixing bowl.

      Add the halved cherry tomatoes, diced cucumber, and finely chopped red onion to the bowl with the corn.

        In a small bowl, whisk together the olive oil, apple cider vinegar, honey (if using), and a pinch of salt and pepper. Adjust seasoning according to taste.

          Drizzle the dressing over the salad ingredients and toss gently to combine.

            Fold in the chopped basil and crumbled feta cheese.

              Serve immediately or refrigerate for up to an hour to let the flavors meld together. Enjoy your refreshing summer salad!
