12 oz (340g) penne pasta

1 lb (450g) Italian sausage (sweet or spicy, sliced)

3 tablespoons olive oil

4 cloves garlic, minced

1/3 cup honey

1/4 cup soy sauce

1 tablespoon apple cider vinegar

1 teaspoon red pepper flakes (optional, for heat)

1 cup cherry tomatoes, halved

1 bell pepper, sliced (any color)

2 cups spinach, fresh

Salt and pepper to taste

1/4 cup fresh basil, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Cook the Sausage: In a large skillet, heat olive oil over medium heat. Add the sliced Italian sausage and cook until browned and cooked through, about 6-8 minutes. Remove from the skillet and set aside.

      Make the Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Then, stir in the honey, soy sauce, apple cider vinegar, and red pepper flakes. Mix well and let simmer for about 2-3 minutes.

        Add Vegetables: Toss in the cherry tomatoes and bell pepper, cooking for another 2-3 minutes until the vegetables start to soften.

          Combine Everything: Return the cooked sausage to the skillet, add the fresh spinach, and stir everything together. Cook for an additional 2 minutes until the spinach is wilted.

            Combine with Pasta: Add the drained penne pasta directly into the skillet. Stir everything together until the pasta is evenly coated with the sticky sauce. If the mixture is too thick, you can add a splash of water or pasta cooking water to loosen it.

              Season: Taste and season with salt and pepper as needed.

                Serve: Remove from heat, garnish with fresh basil, and serve warm with grated Parmesan cheese on top.
