Sautéed garlic and optional red pepper flakes add a lovely kick. Simply fill tortillas, cook until golden, and serve with salsa and sour cream for a tasty treat. Ingredients
  

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

1 tablespoon olive oil

1 clove garlic, minced

4 large flour tortillas

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for a bit of heat)

Salsa and sour cream for serving (optional)

Instructions
 

Sauté the Spinach: In a medium skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the chopped spinach and cook until it wilts down, about 2-3 minutes. Remove from heat and let cool slightly.

    Mix the Filling: In a mixing bowl, combine the sautéed spinach with the crumbled feta cheese, shredded mozzarella, black pepper, and red pepper flakes (if using). Stir until well combined.

      Prepare the Quesadillas: Place the tortillas on a clean surface. Evenly spread the spinach and cheese mixture on one half of each tortilla. Fold the other half over to create a half-moon shape.

        Cook the Quesadillas: Wipe the skillet clean and return it to medium heat. Place the folded quesadillas in the skillet (you may need to do this in batches). Cook for 3-4 minutes on each side or until golden brown and the cheeses have melted.

          Slice and Serve: Once cooked, remove the quesadillas from the skillet and let them rest for a minute. Cut into wedges and serve warm with salsa and sour cream on the side, if desired.
