Spicy Turkey Cauliflower Rice

1 lb ground turkey

4 cups cauliflower rice (fresh or frozen)

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 can (14 oz) black beans, drained and rinsed

1 tbsp olive oil

2 tbsp taco seasoning

1 tsp smoked paprika

1 tsp cayenne pepper (adjust to taste)

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

1 avocado, sliced (optional)

Lime wedges (for serving)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Stir in the minced garlic and red bell pepper, cooking for an additional 2-3 minutes until the pepper has softened.

      Increase the heat to medium-high and add the ground turkey to the skillet. Cook until the turkey is browned and fully cooked, breaking it apart with a spatula (about 7-8 minutes).

        Once the turkey is browned, stir in the taco seasoning, smoked paprika, cayenne pepper, salt, and pepper. Mix well to ensure the turkey is evenly coated with the spices.

          Add the black beans and cauliflower rice to the skillet, stirring to combine. Cook for another 5-7 minutes, allowing the cauliflower to soften and the flavors to meld. If using frozen cauliflower rice, ensure it's heated through and any excess moisture is cooked off.

            Taste and adjust seasoning as desired.

              Serve hot, garnished with fresh cilantro, and topped with sliced avocado if desired. Squeeze lime juice over the bowl for a zesty finish.
