Ingredients

1 can (14.75 oz) of pink salmon, drained and flaked

1/2 cup breadcrumbs (preferably seasoned)

1/4 cup finely chopped green onions

1/4 cup mayonnaise

1 large egg, lightly beaten

1 teaspoon Dijon mustard

1 teaspoon Old Bay seasoning

1/2 teaspoon black pepper

1/4 teaspoon salt (or to taste)

1/4 cup vegetable oil (for frying)

Lemon wedges (for serving)

Fresh parsley (for garnish)

Instructions

Prepare the Mixture: In a large mixing bowl, combine the drained and flaked salmon, breadcrumbs, chopped green onions, mayonnaise, beaten egg, Dijon mustard, Old Bay seasoning, black pepper, and salt. Mix everything together until just combined, being careful not to overmix.

Shape the Patties: Using your hands, form the mixture into patties, approximately 2 to 3 inches in diameter. This recipe should yield about 8 salmon patties.

Chill the Patties: Place the formed patties on a plate and refrigerate for about 30 minutes. This helps them hold their shape during frying.

Heat the Oil: In a large skillet, heat the vegetable oil over medium heat until hot but not smoking. You can test the oil by dropping a small piece of batter; if it sizzles, the oil is ready.

Fry the Patties: Carefully place the chilled salmon patties into the skillet, making sure not to overcrowd the pan. Fry for about 3-4 minutes per side, or until they are golden brown and crispy. Adjust the heat as needed to prevent burning.

Drain Excess Oil: Once done, transfer the patties to a plate lined with paper towels to drain any excess oil.

Serve: Serve the crispy salmon patties hot with lemon wedges and garnish with fresh parsley. They can be enjoyed on their own or with your favorite dipping sauce.
