1 cup (226g) unsalted butter, softened

1 1/2 cups (300g) granulated sugar

4 large eggs, at room temperature

2 teaspoons vanilla extract

2 cups (250g) all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup (120ml) whole milk, at room temperature

Zest of 1 lemon (optional for added flavor)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

    In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 5 minutes.

      Add the eggs one at a time, mixing well after each addition. Incorporate the vanilla extract and lemon zest if you choose to include it.

        In a separate bowl, whisk together the flour, baking powder, and salt until well combined.

          Gradually add the flour mixture to the butter mixture, alternating with the whole milk. Begin and end with the flour mixture, mixing until just combined after each addition. Be careful not to overmix.

            Pour the batter into the prepared cake pan, smoothing the top with a spatula.

              Bake in the preheated oven for 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.

                Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

                  Serve plain, or dust with powdered sugar, or add a dollop of whipped cream and fresh berries for a delightful touch!
