Smoked Salmon Roll-Ups with Cucumber and Hummus

This easy recipe combines thinly sliced smoked salmon, fresh cucumber strips, and a creamy hummus mixture with dill and garlic. Perfect as an appetizer or light meal, they’re tasty and healthy! 8 oz smoked salmon, thinly sliced

1 large cucumber, peeled and sliced into thin strips

1 cup hummus (store-bought or homemade)

2 tbsp fresh dill, chopped (or 1 tbsp dried dill)

1 tbsp lemon juice

1/4 tsp garlic powder

Fresh black pepper, to taste

Optional: capers and arugula for garnish

Instructions
 

Prepare the Hummus Mixture: In a small bowl, combine the hummus, dill, lemon juice, and garlic powder. Mix well until smooth and creamy. Season with fresh black pepper to taste.

    Slice the Cucumber: Using a vegetable peeler or mandoline, slice the cucumber into thin strips. Aim for around 1/8-inch thickness for easy rolling.

      Assemble the Roll-Ups: Lay a slice of smoked salmon flat on a clean surface or plate. Spread a generous layer of the hummus mixture over the salmon, leaving a small border around the edges.

        Add Cucumber Strips: Place 2-3 cucumber strips on the bottom edge of the salmon slice overlapping slightly.

          Roll it Up: Starting from the edge with the cucumber, carefully roll the salmon away from you into a tight cylinder. Use the edge of the salmon to seal in the fillings. Repeat for all slices of salmon.

            Chill (Optional): For a crisper texture, wrap the roll-ups in plastic wrap and refrigerate for about 15-30 minutes.

              Serve: Slice each roll-up into bite-sized pieces, garnish with capers and arugula if desired, and serve with extra hummus on the side for dipping.
