2 lbs boneless, skinless chicken thighs

1 can (10 oz) diced tomatoes with green chilies (like Ro-Tel)

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 packet taco seasoning (or homemade seasoning blend)

1 cup cream cheese (softened)

1 cup shredded cheddar cheese

1/2 cup chopped fresh cilantro (for garnish)

Tortillas (for serving)

Optional toppings: avocado slices, sour cream, sliced jalapeños, lime wedges

Instructions
 

Prep the Chicken: Place the boneless chicken thighs into the bottom of the slow cooker. Season with salt and pepper.

    Add Ingredients: Pour the diced tomatoes with green chilies over the chicken, then add the black beans, corn, and taco seasoning. Gently stir to combine ingredients.

      Cook: Cover the slow cooker with the lid and set it on low for 6-8 hours or on high for 3-4 hours. The chicken should be tender and easily shreddable.
