Skillet Banana Fritters

Ingredients
  

2 ripe bananas, mashed

1 cup all-purpose flour

1/2 cup milk (or plant-based alternative)

1 large egg

1/4 cup sugar (brown or granulated)

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp cinnamon

1/4 tsp vanilla extract

Pinch of salt

Cooking oil or butter for frying

Optional: powdered sugar for dusting, chopped nuts or chocolate chips

Instructions
 

In a medium mixing bowl, mash the ripe bananas until smooth. You can leave some small lumps for texture if desired.

    Add the egg, vanilla extract, and milk to the mashed bananas, and mix well until fully incorporated.

      In a separate bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, cinnamon, and salt until combined.

        Gradually pour the dry mixture into the wet mixture, stirring gently until just combined. Avoid overmixing; a few lumps are okay!

          Heat a skillet over medium heat and add a small amount of cooking oil or butter to coat the bottom of the pan.

            Once heated, drop spoonfuls (about 2 tablespoons) of batter onto the skillet, leaving space between each fritter.

              Cook for about 2-3 minutes on one side, or until bubbles form on the surface and the edges look set. Flip and cook for another 2-3 minutes until golden brown on both sides.

                Repeat the process with the remaining batter, adding more oil or butter as needed.

                  Serve warm, dusted with powdered sugar or topped with optional nuts or chocolate chips if desired.
