1 lb shrimp, peeled and deveined

1 ripe avocado, diced

2 cups cooked quinoa or rice

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1 cup fresh mango, diced

1/4 cup cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper, to taste

1/4 cup Greek yogurt (optional)

For the Lime-Chili Sauce:

1/4 cup mayonnaise

2 tablespoons lime juice

1 teaspoon chili paste (or more to taste)

Pinch of salt

Prepare the Shrimp: In a mixing bowl, combine shrimp with olive oil, garlic powder, chili powder, salt, and pepper. Toss well to coat.
