1 pound smoked sausage (kielbasa or andouille), sliced into coins

2 cups bell peppers (red, yellow, green), sliced into strips

1 cup red onion, sliced

2 cups zucchini, sliced

1 cup cherry tomatoes, halved

3 tablespoons olive oil

1 tablespoon garlic powder

1 teaspoon paprika (smoked or sweet)

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)
