Sheet Pan Mini Meatloaf and Roasted Potatoes

Ingredients
  

1 lb ground beef (or turkey, for a lighter option)

1/2 cup breadcrumbs (regular or panko)

1/4 cup milk

1/4 cup ketchup (plus extra for topping)

1/4 cup diced onion

1 clove garlic, minced

1 large egg

1 tsp Worcestershire sauce

1 tsp Italian seasoning

Salt and pepper to taste

1 lb baby potatoes, halved

2 tbsp olive oil

1 tsp paprika

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef (or turkey), breadcrumbs, milk, ketchup, diced onion, minced garlic, egg, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix until just combined; be careful not to overmix.

      Shape the Meatloaf: Divide the meat mixture into 6 equal portions and shape each one into a small loaf. Place the mini meatloaves on one side of a large baking sheet lined with parchment paper.

        Season the Potatoes: In a separate bowl, toss the halved baby potatoes with olive oil, paprika, salt, and pepper until well-coated.

          Arrange the Potatoes: Spread the seasoned potatoes out on the other side of the baking sheet, ensuring they are in a single layer for even roasting.

            Bake the Sheet Pan Meal: Place the baking sheet in the preheated oven. Bake for about 20 minutes.

              Add Ketchup Topping: After 20 minutes, remove the sheet pan from the oven. Brush a little ketchup on top of each mini meatloaf for added flavor, then return the pan to the oven and bake for an additional 10-15 minutes, or until the meatloaves are cooked through (internal temperature should reach 160°F) and the potatoes are golden brown and tender.
