Seafood Stuffed Shells

20 jumbo pasta shells

8 oz shrimp, peeled and diced

8 oz scallops, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1/2 tsp garlic powder

1/2 tsp crushed red pepper flakes (optional)

Salt and pepper to taste

2 cups marinara sauce

1 tbsp olive oil

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the jumbo pasta shells according to package directions until al dente. Drain and set aside to cool.

      Sauté the Seafood: In a skillet, heat the olive oil over medium heat. Add the diced shrimp and chopped scallops. Season with salt, pepper, garlic powder, and crushed red pepper flakes. Sauté for about 3-4 minutes until the seafood is cooked through. Remove from heat and let it cool slightly.

        Prepare the Filling: In a large bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, fresh parsley, and the sautéed seafood. Mix well until combined.

          Stuff the Shells: Using a spoon, carefully fill each jumbo shell with the seafood mixture and place them seam side up in a greased 9x13-inch baking dish.

            Add the Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring they are well-coated. Sprinkle the remaining mozzarella cheese on top.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven, let it cool for a few minutes, and garnish with fresh basil leaves before serving.
