1 cup ripe watermelon, pureed

1/2 cup coconut milk (or any milk of your choice)

1/4 cup chia seeds

2 tablespoons maple syrup (or honey)

1/2 teaspoon vanilla extract

Pinch of salt

Fresh mint leaves for garnish

Additional watermelon cubes for topping

Prepare Watermelon Puree: Start by cutting the watermelon into chunks, then blend them in a blender until smooth. You’ll need about 1 cup of pureed watermelon.

    Combine Ingredients: In a mixing bowl, combine the watermelon puree, coconut milk, maple syrup, vanilla extract, and a pinch of salt. Mix well until fully combined.

      Add Chia Seeds: Stir in the chia seeds. Make sure they are evenly distributed throughout the mixture.

        Refrigerate: Cover the bowl and refrigerate the mixture for at least 2-4 hours, or preferably overnight. This allows the chia seeds to swell and thicken the pudding.

          Assemble the Jar: Once the pudding has thickened, stir it well. Layer the chia pudding into a serving jar, starting with a layer of chia pudding, followed by some watermelon cubes, and repeat until the jar is full.
