Refreshing Rhubarb Lemonade

1 cup fresh rhubarb, chopped

1 cup water (for rhubarb syrup)

1 cup granulated sugar

1 cup fresh lemon juice (about 4-6 lemons)

4 cups cold water (for mixing)

Ice cubes

Lemon slices and mint leaves for garnish

Make the Rhubarb Syrup: In a medium saucepan, combine the chopped rhubarb, 1 cup of water, and sugar. Bring to a boil over medium heat, stirring occasionally until the sugar has dissolved and the rhubarb has softened (about 5-7 minutes).

    Strain the Syrup: Remove from heat and let the mixture cool slightly. Pour it through a fine mesh strainer into a bowl or pitcher, pressing down on the rhubarb to extract as much liquid as possible. Discard the solids. You now have a vibrant rhubarb syrup!

      Mix the Lemonade: In a large pitcher, combine the freshly squeezed lemon juice and cold water. Add the rhubarb syrup to the lemonade mix, adjusting sweetness if desired (add more sugar if you like it sweeter). Stir well.

        Chill and Serve: Refrigerate the lemonade for at least 30 minutes to chill. When ready to serve, fill glasses with ice and pour the rhubarb lemonade over the ice.
