Refreshing Cucumber Lemonade

Ingredients
  

1 large cucumber, peeled and sliced

1 cup freshly squeezed lemon juice (about 6 lemons)

1/2 cup sugar (adjust to taste)

4 cups cold water

1/4 cup fresh mint leaves

Lemon slices (for garnish)

Cucumber slices (for garnish)

Ice cubes

Instructions
 

In a blender, combine the sliced cucumber, lemon juice, and sugar. Blend until smooth.

    Strain the cucumber-lemon mixture through a fine mesh sieve into a large pitcher, pressing down to extract all the liquid. Discard the leftover pulp.

      Add cold water to the pitcher and stir well until the sugar dissolves completely.

        Toss in the fresh mint leaves and stir gently to incorporate the flavors.

          Chill in the refrigerator for at least 30 minutes for the flavors to meld.

            To serve, fill glasses with ice cubes and pour the cucumber lemonade over the ice. Garnish with lemon and cucumber slices for an appealing presentation.

              Optionally, you can add a sprig of mint to each glass for an extra touch of freshness.
