Ingredients
  

500g boneless chicken, cut into bite-sized pieces

2 tablespoons vegetable oil

1 medium onion, finely chopped

4 cloves garlic, minced

1-inch piece of ginger, grated

1 teaspoon garam masala

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

400g can of crushed tomatoes

200ml heavy cream or coconut cream

1 tablespoon sugar

Salt to taste

Fresh cilantro, chopped (for garnish)

Cooked basmati rice or naan bread (to serve)

Instructions
 

Sauté Aromatics: In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.

    Add Garlic and Ginger: Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

      Incorporate Spices: Sprinkle in the garam masala, cumin, coriander, turmeric, and red chili powder. Stir continuously for about 30 seconds to bloom the spices.

        Cook Chicken: Add the chicken pieces to the skillet, stirring to coat them in the spice mixture. Cook for 5-7 minutes until the chicken is no longer pink on the outside.

          Add Tomatoes: Pour in the crushed tomatoes and stir well. Bring to a simmer and let it cook for about 10 minutes, allowing the chicken to absorb flavors.

            Add Cream and Season: Reduce heat to low, stir in the heavy cream, and sugar. Let simmer for an additional 5 minutes until the sauce thickens. Season with salt as needed.

              Serve: Remove from heat. Serve the butter chicken hot, garnished with fresh cilantro. Enjoy it with fluffy basmati rice or warm naan bread.
