1 cup all-purpose flour

1/2 cup whole wheat flour

2 tablespoons brown sugar

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon ginger

1/4 teaspoon cloves

1/2 teaspoon salt

1 cup pumpkin puree (not pumpkin pie filling)

2 large eggs

1/4 cup milk (or non-dairy alternative)

1/4 cup melted butter (or coconut oil)

1 teaspoon vanilla extract

Instructions
 

Preheat your waffle iron according to the manufacturer's instructions.

    In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, spices, and salt until well combined.

      In a separate bowl, mix the pumpkin puree, eggs, milk, melted butter, and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

          Lightly grease the waffle iron with cooking spray or a little butter. Pour an appropriate amount of batter onto the preheated waffle iron to cover the baking surface.

            Close the lid and cook for about 4-6 minutes, or until the waffles are golden brown and crisp.

              Carefully remove the waffles and repeat with the remaining batter.
