Ingredients
  

1 cup quinoa, rinsed

2 cups vegetable broth or water

1 lemon, juiced and zested

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 bell pepper (any color), diced

1 cup chickpeas, drained and rinsed

1 avocado, sliced

1/4 cup fresh parsley, chopped

1/4 cup olive oil

Salt and pepper to taste

1 tsp garlic powder

1/2 tsp paprika

Instructions
 

In a medium saucepan, add the rinsed quinoa and vegetable broth (or water). Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa has absorbed all the liquid. Remove from heat and let it sit, covered, for 5 minutes.

    While the quinoa is resting, prepare the dressing. In a small bowl, whisk together lemon juice, lemon zest, olive oil, garlic powder, paprika, salt, and pepper.

      Fluff the quinoa with a fork and allow it to cool for a few minutes.

        In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, chickpeas, and parsley. Drizzle the dressing over the mixture and toss gently to combine.

          Serve the quinoa bowl topped with avocado slices. Enjoy immediately or store in the refrigerator for up to 3 days.
