1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably Panko)

1 cup grated Parmesan cheese

4 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper, to taste

¼ cup fresh parsley, chopped (for garnish)

Olive oil spray

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a shallow bowl, place the flour and season with salt and pepper.

      In a second bowl, beat the eggs until well combined.

        In a third bowl, mix the breadcrumbs, grated Parmesan, minced garlic, Italian seasoning, paprika, and a pinch of salt and pepper until thoroughly combined.

          Dredge each chicken piece in the flour, shaking off excess, then dip into the egg, and finally coat with the breadcrumb mixture, pressing gently to adhere.

            Place the coated chicken bites in a single layer on the prepared baking sheet. Lightly spray the tops with olive oil spray for extra crispiness.

              Bake in the preheated oven for 15-20 minutes or until the chicken is golden brown and cooked through, flipping halfway through for even crispiness.

                Once done, remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
