Ingredients

For the Chicken Marinade:

4 boneless, skinless chicken thighs or breasts

4 cloves garlic, minced

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons lime juice

2 tablespoons olive oil

1 tablespoon white vinegar

1 teaspoon dried oregano

For the Creamy Green Sauce:

1 cup fresh cilantro leaves

1 jalapeño pepper, seeded and roughly chopped (adjust for spice)

2 tablespoons lime juice

½ cup mayonnaise

¼ cup Greek yogurt (or sour cream)

1 clove garlic, minced

Salt to taste

For Garnish:

Lime wedges

Extra cilantro leaves

Instructions

Marinate the Chicken: In a large bowl, combine minced garlic, cumin, paprika, salt, black pepper, lime juice, olive oil, vinegar, and oregano. Add the chicken thighs or breasts, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 1 hour, or up to overnight for more flavor.

Prepare the Creamy Green Sauce: In a blender or food processor, combine cilantro, jalapeño, lime juice, mayonnaise, Greek yogurt, minced garlic, and salt. Blend until smooth and creamy. Taste and adjust seasoning as needed. Transfer to a bowl and refrigerate until ready to serve.

Preheat the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, prepare for direct grilling.

Grill the Chicken: Remove the chicken from the marinade, allowing excess to drip off. Place the chicken on the grill and cook for about 6-8 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

Rest the Chicken: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes to retain its juices.

Serve: Slice the grilled chicken and serve with the creamy green sauce drizzled on top or on the side. Garnish with lime wedges and extra cilantro leaves for a fresh touch.
