Overnight French Toast Casserole

1 loaf of brioche or challah bread, cut into 1-inch cubes

8 large eggs

2 cups whole milk

1 cup heavy cream

1/2 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1 cup maple syrup (plus extra for serving)

1 cup pecans or walnuts, roughly chopped (optional)

Fresh berries, for garnish (optional)

Instructions
 

Prepare the Bread: Place the cubed bread in a large mixing bowl or directly into a greased 9x13-inch baking dish, spreading it evenly.

    Mix the Egg Mixture: In a separate bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt until well-combined and the sugar is mostly dissolved.

      Combine: Pour the egg mixture over the cubed bread, ensuring all pieces are thoroughly soaked. Gently fold in the chopped nuts, if using.

        Cover and Refrigerate: Cover the baking dish with plastic wrap or aluminum foil and refrigerate overnight (or at least 4 hours) to allow the bread to absorb the mixture.

          Preheat the Oven: In the morning, preheat your oven to 350°F (175°C).

            Bake: Remove the cover from the baking dish and drizzle 1 cup of maple syrup over the top. Bake uncovered for 45-55 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

              Serve: Let the casserole cool for about 10 minutes before slicing. Serve warm, drizzled with additional maple syrup and topped with fresh berries if desired.
