4 cups mixed greens (spinach, arugula, and romaine)

2 large oranges, peeled and segmented

1 cup fresh strawberries, sliced

1 cup mandarin oranges, drained

1/2 cup red onion, thinly sliced

1/2 cup toasted almond slices

1/4 cup feta cheese, crumbled (optional)

1/4 cup fresh mint leaves, chopped

Dressing:

1/4 cup orange juice (freshly squeezed)

1/4 cup Greek yogurt

2 tablespoons honey

1 tablespoon apple cider vinegar

Salt and pepper, to taste

Instructions
 

In a large salad bowl, combine the mixed greens, orange segments, sliced strawberries, mandarin oranges, and red onion. Toss gently to mix the ingredients without breaking the delicate fruit.

    In a small bowl, whisk together the orange juice, Greek yogurt, honey, apple cider vinegar, salt, and pepper until smooth and well combined.
