One Skillet Salmon with Lemon Orzo

Ingredients
  

4 fillets of salmon (about 6 oz each)

Salt and pepper, to taste

2 tablespoons olive oil

1 cup orzo pasta

2 cups vegetable or chicken broth

Zest of 1 lemon

Juice of 1 lemon

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach leaves

1 tablespoon fresh parsley, chopped (for garnish)

2 tablespoons grated Parmesan cheese (optional)

Instructions
 

Prepare the Salmon: Season salmon fillets with salt and pepper on both sides. Set aside.

    Cook the Orzo: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

      Add Orzo and Broth: Stir in the orzo and cook for a minute, then pour in the vegetable (or chicken) broth. Bring it to a boil, then reduce the heat to a simmer. Cook, stirring occasionally, for about 8-10 minutes, or until the orzo is al dente and most of the liquid has been absorbed.

        Incorporate Zest and Tomatoes: Add the lemon zest, lemon juice, and cherry tomatoes to the skillet, stirring to combine. Allow it to cook for another 2-3 minutes.

          Cook the Salmon: Push the orzo to the sides of the skillet to create space in the center. Place the seasoned salmon fillets skin-side down in the center of the skillet. Cover and cook for 6-8 minutes or until the salmon is cooked through and flakes easily with a fork.

            Add Spinach: Gently fold in the spinach leaves during the last minute of cooking, allowing them to wilt.

              Serve: Remove from heat, sprinkle with chopped parsley and Parmesan cheese (if using). Serve the salmon over the lemon orzo with a generous squeeze of fresh lemon juice if desired.
