1 pound chicken breast, diced

1 package (16 oz) potato gnocchi

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

Zest and juice of 1 large lemon

2 cups baby spinach

1 cup chicken broth

1/2 cup heavy cream

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Sauté the Chicken: In a large pot over medium heat, heat the olive oil. Add the diced chicken breast and season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the pot and set aside.

    Cook Aromatics: In the same pot, add the minced garlic, dried thyme, and dried oregano. Sauté for about 1-2 minutes until fragrant.

      Prepare Gnocchi: Add the potato gnocchi to the pot along with the chicken broth and lemon juice. Stir well, scraping the bottom of the pot to release any flavorful bits. Bring to a simmer.

        Add Cream and Spinach: Once simmering, stir in the heavy cream, lemon zest, and baby spinach. Cook for another 2-3 minutes until the spinach has wilted and the gnocchi are heated through.

          Combine and Serve: Return the cooked chicken to the pot and mix well. Taste and adjust seasoning with more salt, pepper, or lemon juice if desired.
