Ingredients
  

1 lb ground beef or ground turkey

3 medium potatoes, diced (about 3 cups)

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 cup frozen peas or corn

1 tsp paprika

1 tsp dried oregano

1/2 tsp salt

1/2 tsp black pepper

2 tbsp olive oil

1/4 cup beef or vegetable broth (or water)

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Pan: In a large skillet, heat the olive oil over medium heat.

    Brown the Meat: Add the ground meat to the skillet. Break it up with a spatula and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

      Sauté Vegetables: Add the chopped onion, bell pepper, and minced garlic to the pan. Sauté for 3-4 minutes until the onions become translucent.

        Add Potatoes and Seasoning: Stir in the diced potatoes, paprika, oregano, salt, and black pepper. Mix well.

          Add Liquid: Pour in the broth (or water) and stir everything together. Bring the mixture to a simmer.

            Cook Covered: Cover the skillet with a lid, reduce the heat to low, and let it cook for about 15-20 minutes. Check occasionally and stir to prevent sticking. The potatoes should be tender.

              Add Peas or Corn: Once the potatoes are cooked, add the frozen peas or corn. Stir to combine and cook for another 5 minutes until heated through.

                Garnish and Serve: Remove from heat. Garnish with fresh parsley before serving. Enjoy your delicious one-pan meal!
