No Bake Pineapple Cream Dessert

Ingredients
  

1 can (20 oz) crushed pineapple, drained

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

1 cup shredded coconut (optional)

Fresh pineapple slices and mint leaves for garnish

Instructions
 

In a large mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat with an electric mixer until smooth and creamy.

    In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.

      Add the drained crushed pineapple to the cream mixture and fold gently until evenly distributed.

        In another bowl, combine the graham cracker crumbs and melted butter. Mix until all the crumbs are moistened.

          In a 9x9 inch dish or a similar sized dessert dish, press half of the graham cracker mixture into the bottom to form the crust.

            Spread half of the pineapple cream mixture over the crust.

              Add another layer of the graham cracker mixture followed by the remaining pineapple cream mixture, finishing with a layer of the crust.

                If desired, sprinkle shredded coconut on top for added texture and flavor.

                  Cover the dessert with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

                    Before serving, garnish with fresh pineapple slices and mint leaves.
