3 large eggs

1/4 cup fresh mozzarella cheese, diced

1/4 cup cherry tomatoes, halved

1 tablespoon fresh basil, chopped

1 tablespoon olive oil

Salt and black pepper, to taste

1 tablespoon grated Parmesan cheese (optional)

Whisk the Eggs: In a medium bowl, crack the eggs and whisk them until well combined. Season with salt and black pepper to taste.

    Prepare the Filling: In a separate bowl, mix the diced mozzarella, halved cherry tomatoes, and chopped basil. Mix well to combine and set aside.

      Heat the Pan: In a non-stick skillet, heat the olive oil over medium heat. Make sure it coats the bottom of the pan evenly.

        Cook the Eggs: Pour the whisked eggs into the skillet, tilting the pan slightly to ensure the eggs spread evenly across the bottom. Allow to cook undisturbed for about 2-3 minutes until the edges begin to set.

          Add Filling: Once the edges are set, sprinkle the mozzarella filling evenly over one half of the omelet. If desired, sprinkle grated Parmesan cheese over the filling for an extra cheesy flavor.
