Ingredients

2 large yellow onions

1 cup all-purpose flour

1 cup breadcrumbs (Panko for extra crunch)

1/2 cup buttermilk

1 large egg

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

Vegetable oil for frying

Instructions

Prep the Onions: Peel and slice the onions into 1/4-inch thick rings. Separate the rings and set aside.

Prepare the Batter: In a bowl, whisk together the flour, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using). In another bowl, whisk the buttermilk and egg until combined.

Coat the Rings: Dip each onion ring first into the buttermilk mixture, allowing the excess to drip off, then dredge it in the seasoned flour mixture. For added crunch, repeat the process: dip back into the buttermilk and then the breadcrumbs, ensuring an even coating.

Heat the Oil: In a deep skillet or fryer, heat vegetable oil to 350°F (175°C). You need enough oil to submerge the onion rings completely.

Fry the Onion Rings: Carefully add a few onion rings at a time to the hot oil, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 2-4 minutes per side. Use a slotted spoon to remove them and drain on paper towels.

Serve: Season with additional salt if desired, and serve hot with your favorite dipping sauces like ranch, ketchup, or spicy aioli.
