2 cups mixed greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/2 red onion, thinly sliced

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra-virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, and fresh parsley.

    In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper to create the dressing.

      Pour the dressing over the salad mixture and gently toss until all ingredients are well-coated.

        Transfer the salad to a serving platter and sprinkle the crumbled feta cheese on top.

          Serve immediately or allow to chill in the refrigerator for about 15 minutes to meld the flavors.
