Mediterranean Chicken Pasta Salad

Ingredients
  

2 cups penne pasta

1 lb boneless, skinless chicken breast

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Chicken: While the pasta cooks, heat 2 tablespoons of olive oil in a skillet over medium heat. Season the chicken breasts with salt, pepper, oregano, and garlic powder. Cook for about 6-7 minutes on each side, or until fully cooked through. Remove from heat, allow to rest for 5 minutes, and then slice into bite-sized pieces.

      Make the Dressing: In a small bowl, whisk together the remaining olive oil, red wine vinegar, oregano, salt, and pepper. Adjust seasoning to taste.

        Combine Ingredients: In a large mixing bowl, combine the cooled pasta, sliced chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese. Pour the dressing over the salad and toss gently until everything is well coated.
