Ingredients

1 pound ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs (Italian-style)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 large egg

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

4 sub rolls (hoagie bread)

1 cup shredded mozzarella cheese

Olive oil (for frying)

Optional: Red pepper flakes for a spicy kick

Instructions

Make the Meatballs: In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, Italian seasoning, salt, and pepper. Mix until just combined, being careful not to overwork the meat.

Shape the Meatballs: Form the mixture into 1.5-inch meatballs. You should have about 16 meatballs.

Cook the Meatballs: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the meatballs in batches, cooking for about 5-7 minutes per side until browned on all sides. Remove and set aside.

Simmer in Marinara: In the same skillet, pour in the marinara sauce. Gently add the meatballs back to the sauce, cover, and let them simmer on low heat for about 15-20 minutes until cooked through.

Prep the Sub Rolls: Preheat your oven to 375°F (190°C). Slice each sub roll open, but not all the way through. If desired, lightly toast them in the oven for about 5 minutes.

Assemble the Subs: Place 4 meatballs in each sub roll, spooning some marinara sauce over them. Top with a generous handful of shredded mozzarella cheese and sprinkle with red pepper flakes if desired.

Melt the Cheese: Place the assembled subs on a baking sheet and bake in the preheated oven for about 10 minutes, or until the cheese is melted and bubbly.

Serve: Remove from the oven and let cool for a minute before serving. Serve hot with a side of extra marinara for dipping!
