2 boneless, skinless chicken breasts

8 oz (225 g) fettuccine or pasta of choice

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

4 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup (240 ml) heavy cream

1 cup (100 g) sun-dried tomatoes, chopped

1 cup (100 g) baby spinach

½ cup (50 g) grated Parmesan cheese

Fresh basil, for garnish

Red pepper flakes (optional, for spice)

Instructions
 

Cook the Pasta: Begin by cooking the pasta according to package instructions. Reserve ½ cup of pasta water, then drain and set aside.

    Prepare the Chicken: Season the chicken breasts generously with salt, pepper, and Italian seasoning.

      Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and let it rest on a cutting board.

        Create the Sauce: In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Reduce the heat and stir in the sun-dried tomatoes, baby spinach, and Parmesan cheese. Cook until the spinach is wilted and the sauce is thickened, about 3-5 minutes. If the sauce is too thick, you can add some reserved pasta water to reach desired consistency.
