Ingredients

2 lbs flank steak or skirt steak

1/4 cup olive oil

3 tablespoons chipotle peppers in adobo sauce, minced

4 cloves garlic, minced

1 tablespoon ground cumin

1 tablespoon smoked paprika

1 tablespoon brown sugar

2 teaspoons salt

1 teaspoon black pepper

Juice of 2 limes

Fresh cilantro, chopped (for garnish)

Tortillas (for serving)

Optional toppings: diced onions, avocado, sour cream, cheese

Instructions

Prepare the Marinade: In a bowl, whisk together the olive oil, minced chipotle peppers, minced garlic, ground cumin, smoked paprika, brown sugar, salt, black pepper, and lime juice until well combined.

Marinate the Steak: Place the flank or skirt steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it’s fully coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (or overnight for optimal flavor).

Preheat the Grill: Preheat your grill or grill pan to high heat.

Grill the Steak: Remove the steak from the marinade, letting the excess drip off. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Use a meat thermometer; aim for 130°F (54°C) for medium-rare.

Rest the Steak: Once cooked, transfer the steak to a cutting board and let it rest for 5-10 minutes to allow the juices to redistribute.

Slice and Serve: Slice the steak against the grain into thin strips. Serve warm with tortillas and any optional toppings of your choice. Garnish with fresh cilantro for an extra burst of flavor.
