Low Carb Mushroom & Spinach Cauliflower Rice

1 medium head of cauliflower, grated (to make cauliflower rice)

2 cups fresh spinach, chopped

1 cup mushrooms, sliced (button or cremini)

2 tablespoons olive oil

2 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon dried oregano

1 teaspoon salt (or to taste)

½ teaspoon black pepper

¼ cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Cauliflower Rice: Start by removing the leaves and stem from the cauliflower. Cut it into smaller florets and pulse them in a food processor until they resemble rice grains. Alternatively, you can grate the cauliflower using a box grater.

    Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 2-3 minutes until they become translucent.

      Add Garlic & Mushrooms: Stir in the minced garlic and sliced mushrooms. Cook them for about 4-5 minutes, stirring occasionally, until the mushrooms release their moisture and are nicely browned.

        Incorporate Cauliflower Rice: Add the grated cauliflower rice to the skillet. Mix well and let it cook for about 5-7 minutes, stirring occasionally until the cauliflower is tender (but still has a slight bite).

          Add Spinach & Seasonings: Toss in the chopped spinach, dried oregano, salt, and black pepper. Stir well and cook for an additional 2-3 minutes until the spinach is wilted.

            Add Cheese (if using): If you’re using Parmesan cheese, sprinkle it on top and mix it in until it melts and combines well with the cauliflower rice mixture.
